Instructions

  1. Preheat the oven

    to 175°C (350°F) and grease a 23×23 cm (9×9 inch) baking dish with butter or non-stick spray.

  2. Make first the chocolate chips cookie layer, which will be the bottom layer.

  3. In a medium mixing bowl, combine flour, baking powder and salt.

  4. In a separate mixing bowl, cream together the butter, granulated sugar, and brown sugar using an electric mixer until light and fluffy.

  5. Add the egg and vanilla extract to the butter mixture and mix until well combined.

  6. Slowly add the flour mixture to the butter mixture and mix until just combined.

  7. Stir in the chocolate chips.

  8. Press the dough into the bottom of the prepared baking dish.

  9. Place the Oreos close to each other all over the cookie dough layer.

  10. Make the brownie layer

  11. Melt together your dark chocolate with your butter until smooth.
  12. Whisk together the eggs and sugar into a thick mousse like mixture, and then fold through the melted chocolate mix.

  13. Add in the flour, vanilla extract and cocoa powder, and fold through again.
  14. Pour the brownie batter over the Oreo layer.

  15. Bake for 25-35 minutes or until a toothpick inserted into the center comes out clean.

  16. Let the brownies cool for about 15 minutes in the tin before removing them from the tin and cutting them into squares.

  17. The brownies can be stored in an airtight container in the refrigerator for up to 3 days.
    They can also be frozen for up to 3 months.
