History and Origin of Roasted Lamb

Lamb has been a staple in many cultures for centuries. In ancient times, lamb was considered a luxury food item and was often served at feasts and banquets.
The Greeks, in particular, were known for their love of  lamb and would often cook whole lambs on a spit.

In the Christian tradition, lamb has a special significance as a symbol of sacrifice and redemption. This tradition dates back to the Old Testament, where the lamb was sacrificed as an offering to God.
In the New Testament, Jesus Christ is often referred to as the “Lamb of God” who sacrificed himself for the redemption of mankind.

  1. Using a knife, make small incisions over the lamb leg.

  2. Prod a half clove of garlic into each incision.

  3. Place the lamb in a baking tray, or heat-resistant bowl, and add the lemon zest, salt, the remained garlic, pepper, thyme and water.

  4. Roast in 200 °C  (400 °F) preheated oven for about 1 hours and 40 minutes.
