  1. Score the duck skin and fat into diamonds with a sharp knife.
    Season generously with salt on both sides.

  2. Place the breast skin-side down in a cold non stick frying pan.
    Cook over a medium – high heat with half teaspoon of butter.

  3. Place a heavy fry pan or pot over the duck and cook for 10 minutes.
    After 10 minutes of cooking, remove the pan, and turn it over.
    Continue to cook for another 5 minutes.

  4. After 5 minutes of cooking, take out from the pan. Let it rest for 10 minutes.

  5. Remove half of the duck fat. Add the other half of the butter, and vine also.
    Season with salt and pepper, and stir for around 1 minute.

    You can serve now.
