A Little History Of  Toad In The Hole

Toad in the hole was not the original name for the meal with the remaining pork. For instance, “beef boiled in a crust” is how the phrase was described in the 1787 book A Provincial Glossary.

Outside of Pigeons in a Hole, which may be found in Hannah Glasse’s cookbook, the word “hole” first appeared in the 1900 edition of Notes & Queries. Which defined the dish as a “batter-pudding with a hole in the middle holding meat.”

Contrary to common misconception, there is no evidence that the meal has ever included toad. The name’s origin is unknown, however it could be a reference to how toads wait for their prey in their burrows by sticking their heads out of the ground, much like how sausages do with batter.

  1. Preheat the oven to 200°C  (392°F).

  2. Make The Batter For The Toad In The Hole

    In a bowl, combine the milk, eggs, and flour. Beat until well combined.

  3. Place the sausages, onion slices, and oil in a baking dish that can be used in the oven.
    Roast for 15 minutes.

  4. After removing the dish from the oven, pour the batter over and around the sausages.

  5. Place the dish back in the oven and cook for an additional 35 minutes, or until the batter is golden on top and the sausages are thoroughly cooked.

  6. To prepare the gravy, fry the remaining onion in in a frying pan in oil for 5 minutes, or until golden.

  7. Add the flour and whisk while cooking until thickened. Stir in the mustard, and Worcestershire sauce then gradually add the stock.
    Stir until smooth, and is getting thicken to your liking.

  8. Toad in the hole is served with gravy on the side and/or pour over.
